2 apples
handful of seedless grapes
5-6 strawberries
handful of frozen blueberries
1/3C slow cooking oats
1/2C of juice i.e.: pear, banana, coconut

Eating A Healthy Diet

I’ve been on a healthy diet now for almost 4 weeks.  My weight is starting to go down.  I haven’t excercised much, hopefully that will change.

It hasn’t been all fun and cheery.  I think I have been going through withdrawals! Food withdrawals, how crazy is that?!  Wheres my grease, my big juicy steaks, and I gotta tell you – I really miss cheese!

A single movie prompted me to embark on this crazy food adventure – Forks over Knives.   For a while now I’ve been hearing about people going on a raw diet and actually reversing diseases like diabetes, high cholesterol, etc.  Could it be true?  All these medical ailments today caused by our western american diet??  Could the food we are eating be harming us in the long run?  Are we keeping doctors in business on purpose?

Take a good hard look at how early man used to eat, then how we used to eat in the 1920′s, 1950′s, and compare that to how we eat now.  Its quite sad really when we have the power to change our health and we don’t.  I didn’t really want to grow up, get old, and get all the diseases that I thought just “comes with old age”.  I was wrong, these diseases are not from getting old, they are from the food we eat today.

Time for a change.  I don’t mind being a guinea pig if it means altering my health course.   Every day its a challenge to actually “make” and prepare my food.  I don’t cook as much but I do “prepare” a lot.  Fresh fruit in the mornings, vegetables in the afternoon.  Nuts and seeds for snacks.  Trying different vegetables and seeds has been quite the adventure.  Things I’ve never even heard of before!  How do you cook and prepare all this stuff?!  Im learning to “cook” all over again.

Now We Are Not Cooking!

A healthy salad with lettuce greens, sprouts, tomatoes, cucumbers, pecans, and sunflower seeds.  A side of collard greens with vegetable broth and vinegar, topped with raw mashed cauliflower with added non dairy mayo, salt, and onion powder.  For dessert we have puree mango with strawberry chunks, a tea spoon of sugar, topped with cacao coconut granola!

Its been two weeks since we started our no animal protein diet.  Its finally starting to get easier to figure out what to prepare for meals, even getting a little creative in the kitchen!

We have tried the juicing thing, and the soy meat look a likes but as avid meat eaters the whole texture thing is a turn off.  We are not ready for those yet.  So keeping it simple is making it easier to keep on the healthy whole foods.

We got an air popper to make fresh popcorn which is a great snack.

When we leave the house for any period over an hour, I pack a cooler with some water, fresh fruit, and some crackers or chips.  That also helps keep us from pulling into the nearest fast food joint when hunger strikes.  Which its striking quite frequently!  We have already lost a couple of pounds, yet we eat almost constantly.  I find that we are mostly laid back, and stress free, which I think is coming from the food we are eating.
